I am never quite convinced when I see ‘deconstructed’ on the menu, you know those courses where every element is left separate on the plate rather than leaving it whole. However when it came to this display I think deconstructed works better!

It’s the background I think is the problem rather than the display itself. But what do you think? Here are the parts, and they are not all fresh!

  6. I’m not keen on deconstructed desserts. It all just looks like a mess on the plate. In this case though, I think you’ve done the right thing. The background takes away from the beauty of the flowers.
